By the time your read this, Yellowknife should have its newest bistro and restaurant.

Late last week, Jimmy Kong said he was ready to open Sunny's Restaurant and Bistro as early as this week.

Located in the newly renovated former Le Frolic on 49 Street, Sunny's has been just over nine months in the making. Anyone remembering Le Frolic will be impressed with the transformation Kong has made of the place.

The showpiece is the refinished bar, varnished to a gleaming sheen. Six flat screen televisions are placed to give clear sports-viewing from any seat and a large projection television is up for special events.

"Whatever the big sporting events are, we'll be playing them," Kong said, including pay-per-view special events.

The downstairs pub will be open for a few weeks to allow staff time to iron out the wrinkles before opening the upstairs family restaurant section.

The upstairs will have seating for 47 and is set up to be sectioned off for private parties.

Both upstairs and downstairs will share the same large and varied menu, that includes steak, seafood, burgers, Thai noodles, Japanese dishes, and maple-glazed salmon. The seven beers on tap are joined by a long wine list featuring Canadian wines.

Kong, who owns several other businesses and properties in town, said he enjoyed working with chef Pierre LePage as a consultant on the project. LePage will have more work to do at Sunny's, Kong said, once all staff positions are filled.

As of last Friday, Kong still hadn't filled the vacant positions he is hiring for.
