Yellowknife (Feb 15/06) - You will soon be able to add sushi back on the list of dining experiences available around the city.
Co-owners Hiro Izumi and Seiji Suzuki expect Sushi North to fill a big void in the marketplace.
"Since the restaurant in the Explorer Hotel closed down, no one has really provided Japanese food in the city," Izumi said.
"After two years of waiting, we thought it would be nice to make it in town, fresh that day."
Located above Sutherland's Drugs, the bright sunflower-yellow walls complement the modern tables and bar in this cafeteria-style eatery.
Patrons will choose their selection, pay at the counter and then choose to take-out or eat-in.
Whether you're a first-time sushi eater or a connoisseur, the owners say the taste experience will be enjoyable.
"We will use tuna and salmon, as well as vegetable, California and dynamite rolls," Izumi said.
"We will also use Arctic char," said Suzuki. "It's really nice and has a delicious taste.
"It is a quite expensive fish - it's a Northern fish."
"It's a healthy alternative as opposed to deep fried. And it's something different," Izumi said.
"The cholesterol in fish isn't like cholesterol in french fries or meat.
"And by not cooking it, you are getting the full effects of the fish."
While there may be hesitation for those trying the delicacy for the first time, Izumi said people's fears are based on misconceptions.
"There is raw fish in sushi, but it depends on what kind of sushi, because there are rolls that are fully cooked," Izumi said.
Sushi North will cater to both the lunch and after work crowds, opening around 11:30 a.m. and closing around 7 p.m.
